Ingredients:
– 500 g broccoli
– 2 eggs
– 150 g Cheddar cheese
– 2 tablespoons bread crumbs
– 1 Greek yoghurt
– Olive oil
– Salt
Method:
Bring a pot of salted water to a boil. Add the broccoli florets and cook for 3 minutes.
Drain the broccoli and chop finely.
Boil one of the eggs.
Grate the cheese and add it to the broccoli.
Add the chopped hard-boiled egg and the beaten egg.
Add the bread crumbs and salt.
Shape the mixture into small balls, flatten them and place them onto a baking tin lined with lightly greased baking parchment.
Bake at 180 ºC for 10 minutes on one side. Turn them over and bake for another 10 minutes on the other side.
