Santos Recipe for March: Thyme Crackers

One of the best ways to enjoy cooking is preparing simple yet original dishes that, despite being easy to make, never fail to delight because of their appearance and amazing flavour. Our recipe idea for March is Thyme Crackers.
– 35 ml extra virgin olive oil.
– 70 ml water.
– 120 g flour.
– 1/2 tablespoon salt.
– 1 teaspoon fresh thyme.
In a bowl, beat the oil and hot water together at low speed.
Add the flour, thyme and salt: Blend together kneading until obtaining a smooth dough that doesn’t stick to your fingers.
Using a rolling pin, roll out the dough on baking paper, forming a rectangle that is about 3 mm thick. Put the dough in the fridge to chill and harden for about 20 minutes.
Take the dough out of the fridge and using a cookie cutter or knife, cut out squares to make the crackers.
Line a baking sheet with greaseproof paper.
Preheat the oven to 180ºC and bake until the edges start to turn golden brown. Remove from the oven and leave to cool on a wire rack.
