Santos Recipe for April: Sweet Wine Pastries

One of the best ways to enjoy cooking is preparing simple yet original dishes that, despite being easy to make, never fail to delight because of their appearance and amazing flavour. Our recipe idea for April is Sweet Wine Pastries (rosquillas al vino dulce).
– 500 g wheat flour
– 150 g sugar
– 3 eggs
– 100 ml extra virgin olive oil
– 16 g baking powder
– Oil for frying
– 3 or 4 star anise
– 125 ml sweet white wine
– Sugar for sprinkling
Heat the olive oil and star anise over a low heat and let them infuse for 10 minutes. Wait until oil has cooled and remove star anise.
Separate the egg yolks from the egg whites and beat egg the whites until they form stiff peaks.
Add the egg yolks, and fold them in being careful not to deflate the egg whites.
Beat the sugar with the star anise-infused oil, add the sweet white wine and then add it to the egg mixture.
Combine the flour with the baking powder and carefully add to the bowl. Beat until you obtain a smooth, lump-free dough.
Shape the dough into a ball and wrap it in cling film. Let it rest for a couple of hours in the fridge to make it easier to handle.
Heat the oil for frying in a large saucepan.
Coat your hands and the kitchen worktop with oil to be able to handle dough better and shape the dough into balls. Use your fingers to make a hole in the centre and fry them.
Sprinkle with sugar afterwards.
