Ingredients for 4 people:
– 1 cauliflower
– 3 carrots
– 2 potatoes
– 6 cloves of garlic
– 2 or 3 tablespoons of sweet paprika
– Olive oil
– Salt
Method:
Place the clean cauliflower, in small florets, in a saucepan.
Add a little water and bring to a boil over medium heat.
Meanwhile, peel the carrots, slice them and add to the saucepan.
Peel the potatoes and cut them “breaking” them at the end so they help thicken the sauce. Add them to the saucepan.
While the cauliflower is cooking, for about 20 minutes, put a dash of oil in a frying pan and fry the finely chopped garlic.
At the last moment add the sweet paprika to the garlic and leave it for a minute.
Add the fried garlic and paprika to the cauliflower stew.
Stir gently to mix everything and leave for five more minutes.
Note: The stew improves if has time to rest.
