Authentic Mediterranean diet, potato and olive salad

Turn your kitchen into a special haven— somewhere you can enjoy and spend more time with your loved ones, preparing some of the delicious recipes we suggest. This week give this Greek salad recipe a try.
Ingredients for 4 people:
– 3 medium potatoes
– 1 red onion
– Olives, various types (green, black…)
– 1 tablespoon of capers
– Juice of ½ lemon
– Oregano (fresh)
– Freshly ground pepper
– Extra virgin olive oil
Peel the potatoes and cut them up.
Boil the potatoes in salt water until they are well cooked. Set aside.
In a bowl mix the olives with the capers, and the red onion cut in julienne.
In another bowl prepare the dressing by mixing the oil with the lemon juice, oregano, salt and pepper.
Place the potatoes and olives in a bowl, add the dressing and the capers.
Note: The red onion can be replaced with sweet onion or spring onions. The oregano can be replaced with basil and the capers can be omitted from the recipe if you do not have them.
