Santos Recipe for January: Artichoke Crisps

One of the best ways to enjoy cooking is preparing simple yet original dishes that, despite being easy to make, never fail to delight because of their appearance and amazing flavour. Our recipe idea for January is artichoke crisps.
– One dozen artichokes.
– Extra virgin olive oil.
– Maldon salt.
Clean artichokes. To do this, remove the tough outer leaves until reaching the tender inner leaves. Cut off the top third of the artichoke and all but 1 inch of the stem.
Cut each artichoke in half lengthwise and remove the hairy choke with the aid of a knife.
Slice each of the halves thinly into two or three thin slices.
Line a baking sheet with greaseproof paper and place the slices on it.
Place in the oven at 180ºC and remove when they are golden brown.
Drizzle with oil and sprinkle with Maldon salt.
