A super breakfast, Blueberry Smoothie Bowl


– 150 g blueberries

– 1 tbsp sugar

– Juice of half an orange

– 500 g Greek style natural yoghurt

– 50 g pistachios


Place half of the blueberries in a saucepan with the sugar and juice of half an orange.

Leave for two or three minutes at medium heat until the fruit releases its purple colour and softens a little.

Add the rest of the blueberries and set aside until slightly cooled.

Take a large bowl and first add the Greek yogurt, then the blueberry compote and finally the chopped pistachios.

Note: You can replace the blueberries with strawberries or raspberries, or any other fruit cut into small pieces.

If you don’t have Greek style natural yogurt you can use regular natural yogurt. Similarly, you can replace the pistachios with almonds, walnuts or cashews.

You can change this breakfast smoothie bowl every day by varying the nuts and fresh fruit used.
