Ingredients for 4 people:
– 2 avocados, ripe
– 1 ciboulette
– 1 small tomato
– ½ lime, juice
– Coriander leaves, chopped
– Salt
Method:
Put the peeled avocado in a mortar.
Add the diced tomato.
Add the finely chopped spring onion.
Add the coriander, lime juice and salt.
Crush with the pestle until the mixture resembles a paste.
Taste and add correct the seasoning (salt or lime).
Note: You can omit the coriander and replace the spring onion with a half an onion.
