Santos Recipe for February: Crystal Bread

One of the best ways to enjoy cooking is preparing simple yet original dishes that, despite being easy to make, never fail to delight because of their appearance and amazing flavour. Our recipe idea for February is Crystal Bread (pan de cristal).

Ingredients:

 

 

  1. 200 ml lukewarm water.
  2. 350 g all-purpose flour.
  3. 15 g fresh yeast.
  4. Salt.

 

 

Method:

 

 

Combine 200 ml of lukewarm water, 150 g of flour and a pinch of salt together in a bowl.

 

Add 100 ml of very cold water and mix until well blended. Wait ten minutes until the flour is moistened.

 

Add 1 tablespoon of natural yogurt and the fresh yeast, and mix until well blended.

 

Cover and let the dough rise for about 50 minutes.

 

Add more flour, about 100 g, and mix until well blended. Let the dough rise another half an hour. After this time has passed, add another 100 g of flour and let the dough rise again. Proofing should always be done by letting the dough rise in a warm, draught-free place.

 

Once this time has passed, line a baking tray with greaseproof paper, making creases for it to become grooved in order to hold the dough which is quite runny.

 

Gently squash the bubbles in the dough with a spoon and spread the dough on the paper.

 

Let the dough rise again, covered, until it has doubled in volume. This may take another half an hour. An oven tray may be placed upside down on the baking tray, this will keep the dough covered without touching it.

 

Preheat the oven to 250ºC and bake for 10-15 minutes.
