Santos Recipe for April: Dairy-free chocolate pudding

Ingredients (serves 2)

 

 

  1. 1 large avocado
  2. 4-5 pitted Medjool dates
  3. 1 tablespoon unsweetened cocoa powder
  4. 80 ml hazelnut milk
  5. 1 teaspoon vanilla extract
  6. 1 pinch salt

 

 

For decorating

 

 

  1. 1 handful of toasted hazelnuts
  2. 1 tablespoon of muesli
  3. fresh mint

 

 

Method

 

 

Slice open the avocado, remove the pit and skin. Chop the avocado and place it in the hand blender’s beaker. Add the rest of the ingredients and blend until a smooth creamy mixture is obtained. Adjust the sweetness by adding some sugar, if necessary.

 

Spoon the mixture into serving dishes, cover with clingfilm and refrigerate for at least 1 hour.

 

Just before serving, dust with some cocoa powder, add a few chopped hazelnuts and a teaspoonful of muesli. Finally, decorate with a fresh mint leaf.
